How to get decent tasting Rum!
The problem for most distillers wanting to make Rum is, if the white spirit is a good quality spirit and if the essence they use is molasses based as most are, the Rum will be too sweet.
This shouldn’t be any great surprise because you don’t really have Rum, you have a molasses flavoured spirit or a liquorice schnapps or something but you do not have real Rum. Cola will make it even sweeter. Some of you have had to resort to diet drinks and other flavours to reduce this excessive sweetness. How do they make Rum commercially?
Real Rum is made by fermenting molasses and putting it through a pot still. Pot stills allow the flavour of fermented molasses to drip off the end of the condenser. This is real Rum. That is the procedure used by every major Rum distillery in the World.
Home Distillers up to this point have had to put up with excessive sweetness. This problem has now been rectified.
The Canecutter Rum Kit has steadily been increasing in popularity as distillers discover the Real Taste of Canecutter.
It is much drier and is very enjoyable straight with ice. If you like your Rum with Cola you will be impressed. The number of old timers who taste it and say it reminds them of how Rum used to taste is remarkable.
The kit is makes about 8-12 x 700ml bottles depending on fermentation conditions. Even with freight, it may very well work out cheaper than an essenced spirit but don’t do it because of that, do it for the taste.
Distillers that have reflux condensers on their boiler will need to buy a pot still head. If you are a Rum Drinker it will be worth it. The Canecutter Rum Kit is only available from Homebrewers Warehouse.
