Our aim should be to have our equipment with as low as possible bacteria count. Sodium Metabisulpite is often labelled steriliser. Many reference books including Papazians state that this chemical is totally ineffective when mixed with water. It is a waste of time attempting to sterilise a fermenter if it is dirty as it can easily become reinfected.
It is far better to clean and then rinse well with your brewing water. If you think rinsing may contaminate your brew then why use that water for brewing?
Chlorinated products (nappy cleaners) and bleach may be handy for some sanitising but be wary. Americans favour bleach but only in glass fermenters that dont get tainted like our plastic ones.
Beer reticulation professionals would never use bleach in their plastic beer lines for that reason. Since 1993 I have endorsed the use of Sodium Hydroxide (in a caustic solution) no stranger in the brewing industry. The American Homebrewers Association recently called it The Elephant Gun of cleaners To improve on that and to assist in the rinsing of the fermenter, free rinsing agents were added and a new product was born Youngas Fermenter Keg and Line Cleaner.
The runs are on the board. This product remains unchanged but in my view has been lied about relentlessly by people who want to sell you something else.Products with similar formulation are gaining popularity around Australia, so dont be misled, read good brewing books and always use a clean fermenter.
