I hope everyone has recovered from our holiday period. It has certainly been a hectic time in the shop. I had to get back on the floor in the shop as we had Tom on holidays and Colin worked the warehouse for him. I’d like to thank our customers for their patience and Rayshel and Logan for their help.
I got back into recipe design and I love doing that. It is special to put together something that may have never been done before. I always feel like I should thank the brewer for letting me be part of it.
It may take a little time but the brewer can tell me what he or she wants and this would entail sweetness, bitterness, malt and hop flavour and aroma. The recipe could be a full mash all grain or an extract or simply a can with plenty of dress up. The recipe below was made up for Richard and should be easy. He was using dry yeast so we have used a little bit of license with the name.
Rich Real Pilsener
Put 2 litres of water on heat, add 250g dry corn syrup, 250g light malt, 250g amber malt and stir. As it comes up to the boil the lumps will dissolve. Add 2 packs (20g) of saaz pellets and boil for 5 mins. Put 250g dextrose in fermenter add ½ jug of boiling water. Add one can of Diamondback Bitter and rinse can out with the remaining ½ jug. Stir the mix well, add another saaz pack add the contents of your boil, add filtered water to the 22 – 22 litre mark with plenty of aeration add a packet of 514 and cool ferment at 22-25 degrees. Remember that pilseners have plenty of bitterness put we have the amber malt in there to balance that up.
The importance of filtered water in brewing cannot be underestimated. We have noticed considerable interest from brewers not just for their brews but also for drinking water.
